These steaks come from the top 1% of cattle available in Scotland which is why we entered them into the World Steak Challenge and won gold award for quality. We carefully dry age this Fillet for 35 full days in a Himalayan salt chamber to create a big, bold, intense flavour.

The beef has an exceptionally high IMF score making it deliciously juicy. Our dry aging process has been developed over the last 30 years by John Gilmour himself. We have a staged process where we gradually lower the moisture levels at pre-determined intervals in our state-of-the-art aging chambers.

This unique process creates a beautifully rounded depth of flavour, that creates some of the best tasting beef in the world!
