Mrs Kirkham’s Lancashire has a beautifully rich and buttery flavour with lingering savoury and toasty notes which stem from its milk production. Each cheese is matured for an average of four to five months, with some cheeses being allowed to mature for up to 10 months.

Mrs Kirkham’s Lancashire follows a very unusual production method compared to other territorial styled cheese; in that it combines curds from several days’ milk production rather than an individual day’s milking. This style of cheese production, whilst seeming to be labour intensive, originates to when the farm was small scale and quantities of milk were much less.
